Cook, drink, learn, and travel with us in Piedmont

 

The flavors of Italy, the taste of foods shaped by tradition and unique terrains, are familiar to those who have already attended our courses. We are thrilled to now offer a course in Piedmont, the region whose cooks and winemakers have employed the gifts of nature to create what may be the finest culinary experience in Europe. To discover this often underrated region, participate in a week of cooking classes and gastronomic excursions with us, feasting on white truffles more precious than gold, and drinking extraordinary wines. Make the region’s traditional dishes, visit stellar restaurants, sublime chocolatiers, and cellars where some of the world’s most highly rated red wines are made. During the day, we will go on excursions to learn about Piedmontese chocolate, honey, hazelnuts, cheeses, and white truffles from locals who have honed their craft over generations. You will hunt for truffles alongside a professional trifulau (truffle hunter) and his dog and attend the famous International White Truffle Festival in Alba. Each day we will enjoy lunch at a carefully selected restaurant. You will also have the exclusive opportunity to visit Angelo Gaja’s winery in Barbaresco, not normally open to the public, where you will taste four of his superlative wines. Gaja is one of Italy’s premier wine producers and has been friends with the Hazan family since the early 1980’s.

Accommodations

Your home for the week where you will sleep and cook is Casa Gallo, nestled in the beautiful rolling hills of the Langhe, Piedmont’s famous wine producing area. This elegant, modern villa has air conditioning and wifi throughout, an infinity pool, pizza oven, and outdoor dining area. All rooms have spacious private bathrooms, individually controlled air conditioning, and USB and European outlets.

Cooking Classes

Take classes in the land of white truffles and foraged mushrooms. Up to 12 students will participate in intensive hands-on classes taught by Giuliano Hazan. We will make homemade pasta, risotto, meats, and more. Each class will conclude with a family style dinner where we will enjoy the several courses prepared during the class. One evening a professional pizzaiolo will come to demonstrate the art of Italian pizza. All instruction is given in English. Those who wish to join the tours and dinners but not the classes may enroll as non-cooking companions.
